Hi Kurt--------------i'm originally from central illinois, my gramps raised "Hamps" so no stranger to pigs and what to do with em.

Hams are in the cure now, i pack the chops with a dash of meat tenderizer and a sprinkle of pepper before i freeze em----the chops come out pretty tender, the hams are great, its the only way to deal with wild pork in my book

Hi Klaus--------thanks, always enjoyed my trips to Germany----pork hocks and sauerkraut are "good eats" !!!!!!!!!!

Hi Bill-------------two of the other friends that went to the ranch this weekend are good hunters, smokeless center-fire shooters they still look at me cross-ways shooting lead wrapped in paper Smile---so far none of my pigs have taken a step-----a couple of theirs went for a run before they piled up.

Kurt that 44-90 we are working up belongs to the ranch owner, its coming together---he's planning to hunt with it this fall, oughta be fun Smile
